The Game Plan

How Long it Will Take with Kid Chefs

  • 60 minutes (45 of which are active)

Recipe Yield

  • 10-12 chicken fingers, 3 cups butternut squash, 3 cups Brussels sprouts

  • Serves 4-6 people

Suggested Serving Size

  • Little kids (age 8 and under): 1 chicken strip & as many veggies as they want

  • Big kids and adults (age 9+): 3 chicken strips & as many veggies as they want

Ingredient notes

  • Plain greek yogurt:

  • Bread crumbs:

    • We like these ones because they’re whole wheat and don’t have any additives or preservatives.

    • Look for bread crumbs that only have “flour, salt, and yeast” listed in the ingredients.

    • Gluten-Free and Wheat-Free option: Aleia's Panko

Optional to Prep Ahead

  • If you purchased a whole butternut squash, cube it:

    • Here’s how to do it. You’ll want to make your cubes about the same size. 

    • Your squash will probably yield more than 1 lb of cubes. Whatever doesn’t fit on the pan can be roasted while you sit down to eat (yum, leftovers!) or frozen.

  • If you purchased chicken breasts, cut them into tenders:

    • Cut the breasts into strips about ½” thick

    • Put the strips between 2 sheets of wax paper, and pound with a meat tenderizer (or soup can). This will make the strips thinner and will ensure a faster cook time.

Grown-up Pro Tip

We keep the butternut squash and Brussels separate on the pan to help kids who don’t like things mixed together. But if that’s not an issue for your kiddos, mix away!
