Ingredient notes

Make-your-own riced cauliflower:

  • You need 1 large fresh cauliflower head and a food processor. Cut out the stem and leaves, then break down into florets. Pulse until the florets turn into small crumbles.

Grated parmesan

  • The grated parmesan in the refrigerated cheese aisle will likely have fewer fillers, but you can’t beat the shelf-stable parmesan in the pasta aisle for convenience!

  • You can also buy a block of parmesan and grate it yourself if you prefer.

  • It may be more cost effective to buy chicken breasts instead of tenders. If you do that, cut into strips and pound thickest parts with a meat tenderizer.

  • If you’d like to make the rice starting from raw rice, we recommend making 1 cup dry rice with 2 cups water. This will yield 4 cups rice, which will give you leftovers to eat with another meal or freeze for when you make this next time! Make sure you start cooking the rice first as it will take a while.

Pizza doesn’t have to only be a party food nor does the Halloween season need to be full of only novelty foods that lack in nutrition. Instead, recipes like this one create a fun and festive way to “food chain” familiar foods like pizza into a healthier form. Food chaining takes an accepted food in an accepted form and makes small, subtle changes to it to gradually expand the list of similar foods your child is willing to eat. Hopefully these changes to the crust and pattern of the cheese will be welcomed new ways to enjoy pizza (in a healthier form)!
