Chocolate Chip Zucchini Bread

Overview

MAKES ONE LOAF

95 minutes prep time

(30 active, plus 1 hour 5 minutes bake time)

The rundown:

  1. First you’ll combine the dry ingredients

  2. Then you’ll combine the wet ingredients

  3. Then you’ll shred the zucchini and add to mixture

  4. Then you’ll add the chocolate

  5. Then into the oven for an hour

  • To make vegan:

    • Replace 3 eggs with flax seeds and water:

      • Instead of 3 eggs, use 3 tablespoons of flax seeds and 9 tablespoons of water.

      • You'll need to grind the flax seeds into a fine powder using a coffee or spice grinder (or use 2 1/2 teaspoons pre-ground)

      • Then you simply whisk in the water until it becomes gelatinous

  • To make gluten free:

    • Replace the all purpose flour and whole wheat flour with 2 cups of a GF flour blend

Grown-up Pro Tips

  • To make this go faster when your kiddo’s in the kitchen, consider shredding the zucchini ahead of time. But no worries if you don’t!

  • It’s fastest to shred the zucchini with a food processor, but no problem if you don’t have one! An old fashioned box grater works great, as does a spiralizer.

  • If you can’t find dark chocolate chips, no problem. Buy 2 bars and break it apart with a meat tenderizer (in a sandwich bag)

Shopping List

  • 3 eggs

  • 3 zucchini

  • Unsweetened applesauce (you need ½ cup, which is a little more than 1 portion of an applesauce snack pack)

  • 1 cup whole wheat flour

  • 1 cup all purpose flour

  • Dark chocolate chips (or 4 oz dark chocolate bar if you can’t find)

  • Baking powder

  • Natural cane sugar (you’ll need 1 ¼ cup, or just regular granulated sugar works too)

  • Vanilla extract

  • Cinnamon

  • Pantry

    • Olive oil

    • Salt

  • 9”X 5” loaf pan
  • Food processor (or box grater, or spiralizer if you don't have a food processor)

  • Wash hands

  • Collect ingredients

    • 3 eggs

    • 3 zucchini

    • Unsweetened applesauce

    • Whole wheat flour

    • All purpose flour

    • Dark chocolate chips (or 4 oz dark chocolate bar)

    • Baking powder

    • Natural cane sugar (or granulated sugar)

    • Vanilla extract

    • Cinnamon

    • Olive oil

    • Salt

  • Collect tools

    • 9”X 5” loaf pan

    • Food processor (or box grater, or spiralizer)

    • Small bowl

    • Medium mixing bowl

    • Large mixing bowl

    • Whisk

    • Rubber spatula

    • Pastry brush (or paper towel)

    • Butter knife

    • Cutting board

    • Measuring cups (1 cup, ¼ cup, ½ cup)

    • Measuring spoons (1 teaspoon, ¼ teaspoon)

    • Liquid measuring cup

  • Grown-up: preheat oven to 350 F

  • Grease one 9”X 5” loaf pan

    • Pour a little olive oil in a small bowl

    • Dip a paper towel or pastry brush in the oil

    • Coat the bottom and all 4 sides with the oil

  • Measure 1 cup all purpose flour

    • Level with knife

    • Add to medium bowl

  • Measure 1 cup whole wheat flour

    • Level with knife

    • Add to medium bowl

  • Measure 2 ¾ teaspoons baking powder

    • Measure and add 1 teaspoon twice

    • Measure and add ¼ teaspoon 3 times

    • Add to bowl

  • Measure 1 teaspoon salt

    • Add to bowl

  • Measure ¾ teaspoon ground cinnamon

    • Measure ¼ teaspoon 3 times

    • Add to bowl

  • Whisk dry ingredients

  • Germ alert: eggs have germs!

    • Don’t eat raw eggs

    • Wash hands and work surface after using eggs

  • Crack 3 eggs into separate large mixing bowl

    • Start a new bowl, not the same one you used before

    • Fish out any shells that got in there

  • Wash hands and work surface

  • Measure ½ cup olive oil with liquid measuring cup

    • Add to large bowl with the eggs

  • Measure 2 teaspoons vanilla extract

    • Add to egg bowl

  • Measure 1 ¼ cups cane sugar to egg bowl

    • Measure 1 cup, add to bowl

    • Measure ¼ cup, add to bowl

  • Measure ½ cup unsweetened applesauce

    • Add to egg bowl

    • This is slightly more than one snack-size cup of applesauce. Save the rest for a snack!

  • Whisk wet ingredients together

  • Prepare 3 zucchini

    • Wash

    • Cut off ends with butter knife and cutting board

  • Grown-up: set up food processor with grater attachment, remove the guard from the chute

    • Or use box grater or spiralizer

  • Grate 3 zucchini

    • Turn on food processor, feed the 3 zucchini down the chute

    • Use the guard to push it down the chute

  • Grown-up: remove the grater blade from the processor

  • Add 3 cups grated zucchini

    • Measure 3 cups grated zucchini, add to bowl with eggs

    • Use any leftovers in stirfry, omelettes, etc.

  • Whisk zucchini until combined

  • Pour dry ingredients bowl into wet ingredients bowl

  • Whisk together until combined

  • Measure ¾ cup dark chocolate chips

    • Measure ¼ cup 3 times

    • Pour into bowl

  • Fold in chocolate chips with rubber spatula

    • Fold means to gently stir

    • Take batter from bottom and fold it over the top

  • Use rubber spatula to pour mixture into the pan

  • Grown-up: put the pan in oven

    • Kid: set a timer for 65 minutes (1 hour and 5 minutes!)

  • Clean up

  • Grown-up: test if done

    • When timer goes off, insert a toothpick or fork in the center

    • It’s done if it comes out clean

  • Let cool

    • Let cool completely before taking it out of the pan (or eat it straight out of the pan, whichever you prefer!)

  • Nom!

    • Or can be stored tightly wrapped at room temperature for 2 days
