  • We think these are delicious (and healthier) when topped with our applesauce recipe instead of syrup.
    • But if you prefer a more traditional topping, go for a small pour of honey or natural maple syrup (i.e. not the processed brand-name maple syrups)
  • We recommend serving pancakes with plain greek yogurt so the protein can balance the carbohydrates, helping your family stay fuller for longer

  • 1 ripe banana

  • 15 oz can of pumpkin puree (100% pure pumpkin, not pumpkin pie filling)

  • Whole wheat flour (you'll need 1 cup)

  • Ground cinnamon

  • 1 egg

  • Milk (whatever % milk-fat your family prefers, you'll need 1 cup)

  • Plain Greek yogurt, family size tub (for serving, approx. 30 oz size)

  • Unsalted butter (you'll need a quarter of a stick, plus more to grease the pan)

  • Pure maple syrup or honey

you may already have:

  • Baking powder (you'll need 2 teaspoons)

  • Vanilla extract (you'll need 1 teaspoon)
