Overview

Makes 36 cupcakes (perfect for a party)

1 hour prep time

The rundown:

  1. First you’ll measure the dry ingredients

  2. Then you’ll puree the beets and measure other wet ingredients

  3. Then you’ll beat sugar, butter, and eggs

  4. Then you’ll combine everything together and pour into cupcake tins

  5. Cupcakes bake for 22-24 minutes

  6. As the cupcakes cool, you’ll make the cream cheese frosting with an electric mixer

  7. Then you’ll frost the cupcakes!

Grown-up Pro Tips

  • The cream cheese frosting should be kept refrigerated. If the cupcakes aren’t going to be eaten shortly after making, keep the frosting in the fridge in an airtight container. Bring the frosting up to room temperature before icing and serving.

  • To make the baking go more quickly, blend the beet puree before baking with your child

Shopping List

For the cupcakes

  • Unsalted butter (1 stick)

  • Plain greek yogurt (1 cup)

  • 5 large eggs

  • 15 oz cooked beets (either canned or Love Beets style)

  • All purpose flour (1.5 cups)

  • Whole wheat flour (1 cup)

  • Unsweetened cocoa powder (½ cup)

  • Granulated sugar (2 cups)

  • Baking powder

  • Baking soda

  • Vanilla extract

  • 36 cupcake liners

  • Sprinkles (optional)

  • Pantry

    • Salt

    • Olive oil (you’ll need ½ cup)

For the cream cheese frosting

  • Two 8 oz packages full fat cream cheese

  • Honey (you’ll use ½ cup, about half of a 12 ounce honey bear)

  • Vanilla extract

  • Milk (you’ll need 4 teaspoons)

Special Tools

  • 3 cupcake tins (if you only have 1 or 2, will just bake in batches)
  • Food processor or blender

  • Stand mixer or large bowl with electric hand mixer

  • Collect Cupcake Ingredients

    • All purpose flour

    • Whole wheat flour 

    • Unsweetened cocoa powder

    • Stand mixer or large bowl with electric hand mixer

    • Measuring cups (1 cup, ½ cup, ¼ cup)

    • Measuring spoons (1 teaspoon, ¼ teaspoon)

    • Liquid measuring cup

    • Butter knife

    • Whisk

    • Colander/sieve

    • Rubber spatula

  • Grownup: Preheat oven to 325. Set the oven racks to fit 3 cupcake pans if possible.

  • Measure 1 ½ cups all purpose flour

    • Measure 1 cup, level off with knife, dump into large mixing bowl

    • Measure ½ cup, level off with knife, dump into large mixing bowl

  • Measure 1 cup whole wheat flour

    • Add to same large bowl

  • Measure ½ cup cocoa powder

    • Add to large bowl

  • Measure 1 teaspoon baking powder

    • Add to large bowl

  • Measure 1 teaspoon baking soda

    • Add to large bowl

  • Measure ¼ teaspoon salt

    • Add to large bowl

  • Whisk together

    • Set this bowl aside for now

  • Grown-up: puree beets

    • Drain beets over the liquid measuring cup

    • Add 15 ounces beets and ¼ cup beet liquid to food processor or blender

    • Blend until a smooth puree

    • Pour into a new medium bowl with rubber spatula

  • Measure 1 cup plain greek yogurt

    • Add to medium bowl with the beets

  • Measure ½ cup olive oil

    • Use liquid measuring cup

    • Pour into bowl with the beets

  • Measure 1 teaspoon vanilla extract

    • Add to beet bowl

  • Stir with rubber spatula

  • Grown-up: set up stand mixer, or a large bowl with electric hand mixer

  • Add 1 stick of butter to stand mixer bowl

  • Measure 2 cups granulated sugar

    • 1 cup, two times, level off with knife

    • Add to bowl with butter

  • Mix!

    • Run mixer on medium high speed until the butter and sugar mix together and are fluffy

  • Germ alert!

    • You’re about to crack eggs

    • Raw eggs have germs that can make you sick, so don’t eat raw eggs and make sure you wash your hands after touching the gg

  • Add 5 eggs to the mixer, 1 at a time

    • Crack an egg, add it to the mixing bowl, run mixer to blend

    • Repeat for all 5 eggs

  • Wash your hands, clean any surfaces that raw egg touched

  • Add the beet and flour mixtures

    • Add a bit of the beet and flour mixtures, then blend

    • Repeat until everything is combined

  • Line cupcake tins with liners

    • Do 3 trays, if you have that many

    • Otherwise you’ll do it in batches

  • Pour the batter in the tins

    • Use ¼ cup measuring cup to scoop ¼ cup batter into each cupcake slot

    • Fill each slot about halfway

  • Grown-up: put in oven

    • Kid set timer for 22 minutes

    • Grown-up: they’ll be done when a toothpick comes out clean

  • While the cupcakes bake

    • Get icing ingredients out so cream cheese can warm up

      • Two 8 oz packages full fat cream cheese

      • Honey (you’ll use ½ cup, about half of a 12 ounce honey bear)

      • Vanilla extract

      • Milk (you’ll need 4 teaspoons)

    • Clean up the mixer and rubber spatula (you’ll need them again)

    • Make a birthday card or party decorations

  • Let the cupcakes cool

    • When cupcakes are done, let them cool on a baking rack (for at least 20 minutes)

    • While cupcakes are cooling, make the icing!

  • Grown-up: Set up stand mixer with paddle attachment (or use hand electric mixer with large bowl)

  • Add two 8 oz cream cheese packages

    • Unwrap packages and pour into stand mixer bowl

  • Measure 1/2 cup honey

    • Use liquid measuring cup, pour into bowl

    • Use rubber spatula to scrape out the last bits

  • Measure 2 teaspoons vanilla extract

    • Pour into bowl

  • Measure 4 teaspoons milk

    • Pour into bowl

  • Beat icing on medium speed

    • Until combined and creamy

  • Spread on top of cupcakes

    • Use a butter knife or spatula.

  • Add sprinkles and candles!

  • Sing happy birthday!
