Happy Spring! Watermelons are usually a summer time treat, but they’re also a great when you're starting to get excited for warmer weather. Watermelons are a great source of Vitamin A and Vitamin C and can usually be found all year round because of how popular they are. Another year 'round treat is Watermelon Mint Lime Popsicles.
Watermelon Mint Lime Popsicles are a sweet and easy treat that can be eaten as an after school snack or a healthy dessert. We layered our Watermelon Mint Lime Popsicles and made simple Popsicles, but with this recipe you can get creative!
Watermelon Mint Lime Popsicles
Makes 6 Servings
Prep Time: 15 minutes | Freeze Time: 4 hours

Ingredients:
4 cups of cubed seedless watermelon (about 1/4 of a full sized watermelon)
1/4 cup plain Greek yogurt
1 tablespoon chopped fresh mint
1 lime
1/4 cup honey (optional)
Collect Tools:
1 Cup measuring cup
Tablespoon
Blender
Paring knife
Butter knife or kid chef knife
Cutting board
Mezzaluna knife (optional)
Recipe Steps:
Wash your hands
**Grown-up** With a paring knife, carve out sections of watermelon from the rind.
With a kid chef knife or butter knife, cut the sections into small cubes.
**Grown-up**: Set up blender.
Measure out 4 cups of cubed watermelon, pour into blender.
With a mezzaluna, chop the mint leaves into small pieces. (Don't have a mezzaluna? Just tear the leaves with your hands)
Measure out 1 tablespoon of chopped mint. Add to blender.
**Grown Up**: With a knife, cut a lime in half.
Squeeze half of the lime over the blender.
(Optional) Measure out 1/4 cup honey. Add to blender.
Measure out 1/4 cup of plain Greek Yogurt. You can add it to the blender now, or wait and add it as a layer in the popsicle mold. Both are yummy, just personal preference!
Blend the ingredients in a blender until the mixture is smooth. Make sure that the top on the blender is on!
Pour the mixture into ice pop molds. (Optional) Layer the ice pops, one layer with the watermelon and one with yogurt.
Place the popsicles into the freezer.
Once the popsicles are frozen solid (about 4 hours), take them out from the freezer. Run hot water over the molds for 30 seconds. Remove the popsicle from the mold.

**Grown Up Tips**
If your blender's having trouble blending the mixture, add coconut milk or regular water to allow for the cubes to blend more easily.
The ice pops might separate in the molds, shake them for an even distribution.
