While school might have started, it still feels like summer in our neck of the woods. So, we're not ready to say goodbye to summertime food and popsicles yet! We're holding onto summer vibes with this Raspberry Yogurt Pops recipe. It's super simple for kid chefs to cook, and features raspberries, yum! Raspberries not only are delicious, but super healthy. Did you know that they have more vitamin C than oranges, and have a low glycemic index that won't spike your blood sugar? What's not to love.

Keep reading for the super simple Raspberry Yogurt Pops. You just need a few hours to let them freeze, and popsicle molds (we like these on Amazon). Make them before your last day at the pool or beach, and enjoy when you get home!

Raspberry Yogurt Pops

Makes 6 popsicles | Inspired by Super Healthy Kids

20 minutes, plus 4 hours freeze time

Ingredients

  • 1 bag frozen raspberries (10 ounces)
  • Plain yogurt (you'll need about 1 cup)
  • Honey
  • 1 lemon
  • Fresh mint (optional, you'll need just a small handful)

Tools

  • Popsicle Molds (we like these on Amazon)
  • 1 cup measuring cup
  • Tablespoon measure
  • Grown-up knife
  • Potato masher or fork
  • Dinner spoon
  • Cutting board
  • Medium mixing bowl

Recipe Steps

  • Measure 2 cups frozen raspberries (or if you have a 10 ounce bag, just dump the whole bag). Pour into a medium mixing bowl.
  • (Optional, can leave out). Pick the leaves off a small bunch of fresh mint. Wash and dry them, then tear into small pieces over the mixing bowl.
  • **Grown-up**: Cut lemon in half with grown-up chef knife.
  • Kid: squeeze both lemon halves into the bowl with the raspberries.
  • Measure 2 tablespoons of honey, add to the bowl with the raspberries.

  • Use a potato masher or fork to smash the raspberry mixture together.
  • Spoon 1/2 of the raspberry mixture into the popsicle molds, spreading evenly across all the molds. Use the spoon to get out any air bubbles.
  • Use another spoon to add the plain yogurt on top of the raspberry layer. Save room for more raspberries- the yogurt should go about 2/3 of the way up the popsicle mold.
  • Fill the molds with the remaining raspberry mixture.
  • Put the popsicle sticks in, and freeze!
  • Wait at least 6 hours, or overnight.
  • When you're ready to eat a pop, run it under warm water or dip it in a bowl filled with warm water to release it from the mold.
  • Nom!

Grown-up Pro Tips

  • Raspberries are delicious, but they do stain! Make sure to wear an apron.
  • We used frozen raspberries, but fresh would work too. Buying frozen raspberries is a great way to stretch your dollars!
  • If you don't have popsicle molds, no problem. Here are some hacks you can use instead.
