With Father’s Day around the corner and temperatures soaring into the 90s in NYC, we thought it would be perfect timing to make fruit ice pops, for your pops! If your dad loves food, these 4 ingredient ice pops will be an excellent way to say “thanks Dad, stay cool.” You can make them now to prepare for Father's Day or make them the morning of, but remember fruit ice pops need to freeze for several hours. And if mango isn’t your dad’s thing, you can easily swap in a different fruit. Happy Father's Day!

Mango Ice Pops

Makes 6 ice pops | Inspired by Martha Stewart

15 min prep time and 5 hrs freezer time

INGREDIENTS

  • 6 cups frozen mango (about 4 10-oz packages)

  • 1/4 cup light coconut milk

  • 2 Tablespoons lime juice

  • 1 teaspoon vanilla extract

Tools

  • 1 cup measure

  • Liquid measuring cup

  • Tablespoon

  • teaspoon

  • Blender

  • Popsicle mold (Buy on Amazon here)

Recipe Steps

  1. Wash your hands.

  2. **Grown-up** Set up blender.

  3. Measure out 6 cups frozen mango and place into blender.

  4. Measure out ¼ cup coconut milk and pour into blender.

  5. If using a whole lime, cut lime in half with kid-friendly knife or butter knife and squeeze out 2 Tbsp juice. Pour into blender.

  6. Measure 1 tsp vanilla extract and pour into blender.

  7. **Grown-up** Secure cover onto blender.

  8. Blend until smooth.

  9. Pour or spoon into ice pop molds and insert the sticks.

  10. Place into freezer and let set for about 5 hrs. Freezing time will vary based on what’s in your ice pops, your freezer, and the type of mold you’re using.

  11. Clean up. Make your Dad a Father's Day card!

  12. Once ice pops are completely frozen, remove from freezer.

  13. Fill a large bowl with warm water.

  14. Dip ice pops into warm water for 20-30 seconds. Ice pops will be ready when they slide easily out of the mold.

  15. Time to nom!!

Pro Tips

  1. If you don’t have a popsicle mold, don’t worry it’s still super easy to make your own popsicles! You can use popsicle sticks and either an ice tray, a mini muffin tray or small Dixie cups.

  2. There are several ways to unmold the ice pop. We found dipping in warm water to be the most effective, however you can also put them under warm running water, or let them sit at room temperature until you can easily remove them from the mold.

  3. You can freeze whatever you don’t eat by storing them in plastic bags or in an airtight container, using wax paper to separate the ice pops.
